Penang-born Chef Trio Serves Up Authentic Local Favourites in Ascott Gurney Penang’s First Ever Buffet Spread.


The Citarasa Nusantara Buffet is available from 8 April to 3 May 2022 highlighting signatures by Chef Chong, Chef Vince & Chef  Johari. 

 
Chef Ahmad Johari’s Gearbox Soup & Kambing Golek

Kambing Golek
Ascott Specialty Kambing Golek is the most eye-catching highlight at the start of the buffet line. This is the signature of Junior Sous Chef Ahmad Johari. The whole lamb is coated with a distinctive special western marinade which injects flavour into the meat. To serve, Chef Jo adds BBQ Sauce, Garlic Sauce and Mint Sauce to your plate, perfect accompaniment to the richness of the lamb.

Gearbox Soup
Chef Johari’s serves another speciality, Gearbox Soup to the spread. He boils huge pieces of knuckle joints for more than 4 hours with potatoes, carrots and locally-sourced traditional herbs and spices. Served piping hot, the portion of soft meat and cartilage with the gelatinous bone marrow is served in a bowl. Chef Johari adds that this dish is uniquely prepared traditionally, the same way his grandfather used to do it. With a touch of his heirloom flavours, he pays homage to his family’s recipe through this dish. 
 
Chef Chong’s Asam Laksa
Penang-born Executive Chef Chong Lih Chyi explains that his signature Penang Asam Laksa is a mandatory item for the buffet. The popular dish is served with rice noodles, shredded fish and sliced cucumber, onion, and lettuce. With its thick broth authentically prepared from local spices, tamarind and fish flakes, you have the marriage of sour, sweet, spicy and salty flavours.  Chef Chong also quotes proudly that Asam Laksa is uniquely paired with his customized shrimp paste, where he adds special sauces instead of water to achieve a thick consistency.
  
Chef Vince Tan’s Signature Tau Fu Fah
To end the buffet, the silky smooth Tau Fu Fah or soybean pudding by Sous Chef Vince Tan comes highly recommended. While usually eaten warm, Chef Vince’s rendition of this dessert is served chilled and is incredibly soft and smooth. He coaxes every guest he meets to enjoy his homemade signature with either clear sweet syrup infused with pandan or with brown sugar.
