Chef Martin Yan, an Iconic Chinese Chef of TV series fame "Yan Can Cook"with his catchy tagline "If Yan can cook, so can you" recently joined Golden Sands Resort by Shangri-La in the resort's recently introduced on-going campaign "Rooted in Nature". "Rooted in Nature" campaign which began on the 22 of April 2015, is part of world wide Shangri-La Hotels and Resorts' culinary sustainability initiative.
Chef Martin, who was in Malaysia and specifically in Penang for the "Taste of Malaysia" TV programme, made a trip to the resort's seafood supplier and "Rooted in Nature" partner, GST Group Fish Farm, to discover the source of sustainable seafood. Chef Martin was seen scooping and selecting life fish at the farm at Pulau Jerejak.
Upon returning back to Golden Sands Resort at Batu Ferringhi, Chef Martin then teamed up with the resort's Executive Chef where they storm up a not only famous but also delicious Nyonya dish called "Curry Kapitan Fish" at Sigis Bar & Grill.
Chef Martin even brought his own knife, which was custom-made and best of all it has his very own signature on it. That is amazing.
He even spare a few minutes prior to even show us how find he could actually slice the garlic. It was paper thin.
We were given the opportunity to savour some of the dishes from the "Rooted in Natures" sustainable set menu.
"We will be offering a sustainable menu highlighting sustainable seafood and free-range chicken as our main ingredients. The local partners we are working with are GST Group for seafood and AyamPlus for chicken. Locally sourced seafood and free-range chicken will be offered to our guest in line with our 'Rooted in Nature' theme," said Mr Suleiman Tunku Abdul Rahman, director of communication at both resorts.
Special Rooted in Nature events and promotions are taking place at all Shangri-La and Kerry hotels will highlight sustainable sources of produce, fish and meat that can be found on the hotel's menu year-round and celebrate the purveyors who responsibly steward the land and sea to provide Shangri-La chefs with the best possible ingredients. Dishes on offer will include produce and herbs grown on hotel grounds, locally sourced organic vegetables and fruits, line-caught fish, free-range poultry and beef, honey from a hotel's own beehive and more.
The meal started with Grilled Free Range Chicken & Organic Tofu Salad. When everything is fresh, it makes it taste good. Fresh romaine lettuce with onions, deliciously made tofu, slices of succulent juicy tender free range chicken meat and balsamic vinegar.
Next was the Rosemary Scented Broiled Chicken, free ranger tender chicken served with sides of vegetable of the day and mash potatoes.
Nothing beats ending a meal with such heavenly dessert. The yam ice cream and coconut ice cream was really good. You will find small tiny bits of yam pieces in the yam ice cream.
"Shangri-La is commited to promoting greater trace-ability and transparency of where our food sources come from by working with local and sustainable providers. By 2020, our goal is to serve 75% more sustainably sourced food on our menus," said Peter Finnegan, Shangri-La's group director of food and beverage. "Through the Rooted in Nature dining experience, we invite guest to join us in embracing and celebrating the benefits that sustainable food brings us."
With Shangri-La's Rooted in Nature initiative, the luxury hotel group aims to:
- Support local agricultural and fishing communities,
- Buy chemical pesticide-free local produce,
- Source from free-range livestock and poultry products where possible,
- Acquire sustainably sourced seafood caught through ethical means
- and serve organic and fair trade products indicated by national and local food safety standards.
Meeting Chef Martin in real was something that I had never ever imagined. He is as cheerful as you see him on TV. Would like to sincerely thank Golden Sands Resort for such warm hospitality given.
